The 100-watt condenser motor operates quietly and the carriage travels smoothly. The slicer's 7-inch, surgical stainless-steel blade removes for cleaning and sharpening. A calibrated thickness-adjustment knob permits slicing from paper thin to about 3/5 of an inch. A plastic tray for catching sliced food comes with the slicer. Safety features include a hidden childproof switch that prevents the slicer from turning on and an automatic on/off switch on the thickness control knob that shuts the unit off as soon as the thumb releases pressure. Great Slicer July 22, 2010 bears123 I recently purchased the Chefs Choice 632 slicer to use for preparing the wedding buffet for my son's wedding. Right from the start this a very easy unit to use and clean. I was able to sliced Prime Rib and Turkey breast with ease, and sliced fruit with making a mess. The unit is very stable and doesn't slide around on the counter when slicing. The only minor thing that I thought could be improved is the catch tray. It is very small. The vari-tilt is also a good feature.
I had a damage food carriage when I removed it from the box, one of the plastic slides under the carriage was cracked. That didn't stop me from using the unit. I called the 800 number provided and spoke to a very nice lady who took all the info. 3 days later I had a brand new carrage delivered, and no questions asked.
What a great company to business with.
Good but not great July 15, 2010 swk0710 I used the slicer to cut several types of vegetables (carrots, zucchini, etc) and some raw pork loin.
#1 concern: the motor heated up more than I expected during my use. None of the the wonderful reviews addressed that point.
#2 concern: I could not get the slicer to slice raw meat without leaving a "tail". Maybe more experience with the slicer will resolve the issue.
#3 concern: I am not totally pleased with the speed at which the slicer cuts carrots & zucchini. I bought the machine thinking that it would help me spend less time in the kitchen. I don't think that will happen.
#4 concern: the machine is not easy to clean after cutting bloody raw meat. It is important to disinfect the whole machine, but there are so many unreachable areas. I don't even know if I can immerse the entire blade in hot soapy water. The manufacturer should include more specific instructions.

I've had this slicer for 30 minutes - love what it did, had to post a review.
First, I've read the neg reviews and suspect the users missed something; for example, raw meat should be frozen for 15 minutes before trying to slice it. This procedure is recommended even for knife-slicing of beef, to get really thin slices. The user who didn't like the tilt feature might not have been slicing veggies or bread or cheese. I don't get the "unpredictable heel" comment and I completely disagree about "hard to clean."
I sliced a vidalia onion after setting the machine to the lowest possible thickness; it cut paper-thin slices all the way to the root end. I think there might have been between 1/16 and 1/8 inch left - the necessary gap between the blade and the carriage, anyhow, a VERY thin "heel" and it was pretty easy to control. (Maybe the user who complained about that was trying to slice too fast.)
I've wanted a wide-blade slicer for onions, cabbage, cheese, meat and bread, and am convinced this will do everything I want. I'm sure we will use this machine every single day (we make a lot of shredded veggie salads). Our mandoline may be relegated to julienne-ing.
Cleanup is FAST!! I think it took me all of 3 minutes to disassemble it, wipe down the base and back, and wash the blade, guard, and tray, dry them off and reassemble the slicer.
I love the relatively small size.
There are a few cons: (1) there are a lot of plastic parts; (2) the included blade is serrated; (3) it's definitely a "home" version of a commercial slicer. The consequences of those are (1) have to slice slowly to retain control and avoid stressing the machine; (2) have to use it carefully; (3) should clean it immediately after using it. I am willing to put up with all of this in order to get a good quality slicer that gives me the results I want, in a footprint I can "afford."
Great kitchen tool that saves us money June 14, 2010 Scott Brooks (Rochester Hills, MI) Excellent for thin slicing beef and pork for Japanese and Korean recipes.
Buying thin sliced beef/pork in an Asian grocery is much more expensive
and time consuming.
The slicer is easy to use and easy to clean.
Also, impressed with the ease of slicing the beef despite being a
smaller version than what is typically used by grocery stores.
The VariTilt is recommended, if your budget allows.
Quality slicer June 2, 2010 J. Ortega I've owned this slicer for about a year and it never fails to produce quality cuts. I use it a lot for slicing raw bacon since I make my own and even when the slab of bacon is still mostly frozen, the Chef's Choice 632 does a bang up job. It does a great job for light tasks such as bread slicing and cheese slicing too. It's easy to clean and put back together. For standard home use you can't go wrong. Well worth the price and I would recommend it to anyone.
